Windows 7 Ultimate 64x if you can, it'll allow you to put in quite alot of RAM (Up to 192 GBs of it), so no problems with that.

I only have 8GB and don't really need any more, it's not a workstation. Ultimate has some bloat if I recall.

Posting from the new PC! I can confirm it's awesome. I ran Crysis 2 at all ultra plus the high-res texture pack, and it didn't even miss a frame. Perfect.
